HOW TO MAKE PERFECT GUACAMOLE VEGAN PROOFED

Perfect Guacamole from full of goodness Avocado. Guacamole is my favourite snack. This delicacy originates from Mexico and is prepared mainly from avocado, salt, lime, peppers, tomatoes, onion and coriander – and for the brave, a bit of hot and sexy chilli!

However you like it, avocado is an ideal food for the brain as it contains an abundance of healthy fats. Our brain is made up of 80% fat. Good fats are essential and necessary for a properly functioning brain. But be mindful when you’re trying to lose weight, as it’s best to limit avocados to 1/2 every other day.

Avocado also contains masses of vitamin E. According to Dr Amen (Book: Change your brain, change your life), avocado is one of the main foods for brain health and helps to prevent Alzheimer’s disease. The fruit also has a positive effect on the heart, regulates blood pressure, regulates blood sugar, feeds the eyes, supports pregnancy and enhances the beautiful skin.

RECIPE

WHAT YOU NEED

  • 2 ripe avocados
  • 1 small onion
  • a few leaves of fresh coriander
  • 1 lime
  • salt
  • 1/2 red (bell) pepper
  • chilli flakes
  • 1 tomato (deep red)

METHOD

  • First, I cut the avocado in half & remove the stones. Then, I use the tablespoon to take off the peel. Next, I put the avocado flesh into a bowl
  • To the bowl with avocado, I add freshly squeezed lime juice and a pinch of salt Lime makes the avocado stay nice and green rather than becoming dark
  • Next, I peel and finely chop the onions, then add them to the bowl. I do the same with red peppers, coriander and tomato. Before chopping the tomato I remove the inside seedy bit
  • Finally, I mix it all or even crush it a little bit with a fork. You can add more salt or lime if you wish. Sprinkle some chilli flakes on top
  • Instead of bread or nachos, I serve with organic, gluten-free crackers. To add a little bit of character to the crunchy crackers I sprinkle oregano and inactive yeast flakes – Daria’s touch, so yummy!
